Nice product! FYI… The mixer manual says never to use your breadhook at a speed above 2. I did and ended up with a smoking (literally) mixer. Bagel dough is pretty firm, so I think it would even more important to adhere to the guidelines.
Off topic, but I’m obsessed with your apron. Where did you get it?

These look great! If you’ve never tried the twisting method to shape bagels before, I recommend you give it a try. It’s a little more complex but it produces a positively lovely chew.
