    ServSafe Certified Instructor/Proctor here. The problems are as follows:

    Possibility of non food grade material
    Possibility of chemical residue in the plastic

    Beyond this:
    IF old chemical buckets were to be appropriate to use (they are not in any situation) they’re still unlabeled, without lids, and directly stored on the floor

    You also need a variance anytime you are going to pickle to preserve and not for flavor, and that first bucket for sure looks like a house shredded and pickled chow chow
