Popular Hoboken restaurant Blue Eyes is expanding its Hudson County footprint. In an exclusive conversation with The Hoboken Girl, Blue Eyes founder Alessandro Galioto shared that the team is opening a new spot in Jersey City called Vicoletto. Located at 357 7th Street, the former Delenio space, the new restaurant will focus on Italian modern cuisine, with pizza, pasta, and a few main courses. The Details
Blue Eyes first opened in Hoboken in 2015, bringing a fresh Italian menu to the Hoboken waterfront. Over 10 years later, the team is expanding to the Jersey City food scene, with a new restaurant concept called Vicoletto. The restaurant is taking over the former Delenio space at 357 7th Street.

In an exclusive conversation with HG, owner Alessandro Galioto expressed excitement about the new restaurant. The menu will focus on “modern Italian cuisine,” with pizza options, pasta options, and a few entrees.

Alessandro described the new restaurant as a blend of a trattoria and fine dining, featuring exposed brick walls, Italian-imported tableware, and cozy comfort dishes like spicy rigatoni and gourmet pizzas. One anticipated highlight of Vicoletto is the pizza oven, which is currently being shipped from Italy and will arrive in Jersey City next week. Loyal Blue Eyes fans know this is a highlight of the Hoboken haunt.
This development comes not long after changes were made to Blue Eyes in 2024, when a new lease agreement approved by City of Hoboken required the restaurant to redirect its focus toward being a casual cafe. You can read all about that here.

Right now, the team is aiming for an April 2026 opening, but of course, we’ll update this piece as details unfold.
