
If you're looking for a low-calorie alternative to tortillas, try rice paper! I just discovered them, and I can't believe I never used them before. This meal was a total of 525 calories and 23 grams of protein.
Two sheets of rice paper: 70
Half a can of chickpeas: 155
Half of an onion: 30
35g of cheese: 135
Tenderstem broccoli: 25
Butter: 105
Egg wash and sesame seeds: neglible, probably 5 calories
Spices: not counted
I roasted the broccoli with butter, but if you steamed it, you could bring the calories down even more. I used two rice paper sheets like tortillas and rolled the chickpeas, onions, and cheese inside. The top is covered in an egg wash and a sprinkling of sesame seeds. I baked it for about 20 minutes, and it was delicious.
