Been itching to build a direct fire grill, just haven’t had a chance to start on it yet.

Found a set of lamb plate ribs a few days ago and really wanted to cook them that style.

So I turned one of my offsets into a makeshift version. Big diameter cook chamber let me adjust the distance to the grate pretty well.

Did a raspberry jalapeño sauce on them and salt,pepper, garlic and some crushed red pepper.

They were still a hair on the gamey side and it’s definitely a fatty cut. But really happy with how they came out. My son has been hammering them though so not sure I’ll get much!

    How long did you grill them for in total and how long were they getting direct flame?
