If you would like to be on the healthy side in 2026, why not start now? In this simple recipe, I will guide you through the first step toward healthy living by cooking nutritious and natural food.
We need;
Zucchini or other hardy vegetables
Bell pepper
squash
mushrooms
parsley or oregano
olives – pickled olives are already salty
feta cheese – also with salt and tanginess
couscous
We did not add salt because the pickled olives and feta provide saltiness and also act as the dressing for our roasted vegetable couscous salad.
Let’s begin with whatever vegetables you have in your fridge. Zucchini is a great candidate, as it’s easy to find and one of the cheapest vegetables on the market. White button mushrooms are also an excellent choice, along with squash. We will rub these vegetables with a little vegetable oil to prevent them from drying out while grilling. Grilling is a fantastic way to bring out the best flavours in any vegetable, as it intensifies their natural sweetness.
We’ll be using a pan griller instead, but it would be even better if you could grill them over live charcoal, like on a barbecue. The smoke from the charcoal can add a complex flavour to the vegetables. However, while winter is still here, we can make do with this pan griller, which already has the burn markings of a grill.
Now, let’s grill everything: zucchini, mushrooms, squash, red bell pepper, and even olives. Once everything is grilled, chop them into chunky bits and set them aside for the next step.
Start by boiling about 2 cups of water, then add the squash. We need to cook the squash for about three minutes, as it is still hard at this point. After that, grab the couscous and pour it over the boiling water along with the squash. Let the couscous absorb the liquid before adding some cilantro and the remaining chopped grilled vegetables. Cover the pan and turn off the heat, letting it sit for ten minutes.
After ten minutes, mix everything—couscous and grilled vegetables—being careful not to smash any of the vegetables in the process. Fluff the couscous for better presentation, then squeeze some lemon juice over the top and scatter crumbled feta cheese over the salad. Now we’re ready to enjoy our delicious grilled vegetable couscous salad!
