Whenever I need a reset or just a hug, I find myself back in the kitchen cooking the food from my ancestors. 🧄 Whether it’s this lemony Fattoush salad with crispy pita chips, a garlicky patter of homemade hummus or a creamy bowl is cucumber mint yogurt sauce, Lebanese food always seems to be just what the doctored ordered. 🍋Will you make this soon and let me know how you like it?
Ingredients
• 6 cups romaine chopped
• 1 large tomato chopped
• 4 white radishes thinly sliced
• 1 red pepper diced
• 1 peeled cucumber chopped
• ¼ cup chopped parsley
• ¼ cup chopped mint or 2 tablespoons dried mint
• 1 lemon juiced
• 2 cloves garlic grated/crushed
• 4 teaspoons extra virgin olive oil
• 2 tablespoons za’atar
• salt and pepper to taste
Crispy Baked Za’atar Pita Chips:
• 1 inch large pita bread cut into 2 inch pieces
• 1 tbs extra virgin olive oil
• 1 tbs za’atar
• ½ tsp salt
Instructions:
Pre-heat oven to 350 degrees. Line baking sheet with foil and spray with non-stick spray.
In a large bowl or plastic bag, evenly coat pita pieces with olive oil, za’atar and salt. Spread pita in even layer on a baking sheet and bake for 10-12 minutes or until nicely browned.
While pita bread is baking, prepare Middle Eastern Salad. Place salad ingredients romaine through cucumber, in a large bowl. Add fresh parsley and mint. Squeeze the juice of one lemon around the bowl, carefully holding your opposite hand underneath to catch the seeds. Grate garlic directly over the salad using a microplane. Drizzle olive oil around the edge of the salad (this will help ensure the salad is dressed evenly as you toss.) Using tongs or hands, gently toss the salad together. Sprinkle with zaatar, salt and pepper to taste. Crumble toasted pita chips over the salad and toss well before serving. (Also taste great dipped in hummus!)
