Homemade Mumbai-Style Pav Bhaji 🍞🌶️
A spicy, buttery Indian street food classic that’s perfect for weekends!
Ingredients:
For Bhaji:
2 tbsp butter
1 tbsp oil
1 large onion (finely chopped)
1 tbsp ginger-garlic paste
2 large tomatoes (finely chopped or pureed)
1 cup boiled potatoes (mashed)
½ cup boiled peas
½ cup boiled cauliflower
½ cup boiled carrots
1–2 tbsp pav bhaji masala
1 tsp red chili powder (adjust to taste)
½ tsp turmeric
Salt to taste
½ cup water (as needed)
Fresh coriander leaves
Lemon wedges
For Pav:
4–6 pav (dinner rolls)
Butter
A pinch of pav bhaji masala
Method:
Heat butter and oil in a pan. Add onions and sauté till golden.
Add ginger-garlic paste; cook for 30 seconds.
Add tomatoes, turmeric, chili powder, salt, and pav bhaji masala. Cook till oil separates.
Add all boiled veggies and mashed potatoes. Mix well.
Mash everything using a masher. Add water as needed and simmer 10–15 mins.
Finish with butter, lemon juice, and coriander.
Pav:
Slice pav, toast on tawa with butter and a pinch of pav bhaji masala till golden.
