    For your first time, I think it’s fine to probe the meat at the start to get an understanding of how long it takes to come up to temp. In the future, don’t put a probe into the meat until it has the bark you want and if/when you wrap it.

    That’s a heifer, 275 or it’s gonna take forever. Don’t wrap it, if you want put in a foil pan after the stall to catch some of the jus for when you shred. Good luck!
