    My FIL can’t have nitrites, so I smoke some pork bellie strips into an uncured bacon for my my in laws whenever we’re going to visit. I might just have to season it more and cool it all the way.

    If I may make a suggestion for you to try, how about you smoke an Italian style porchetta? One with the loin wrapped in the pork belly.

    I did one two years ago over my own maple charcoal on a rotisserie, and my mouth is watering typing this, because it was so good.
