Authentic Turkish Lentil Soup Recipe | Mercimek Çorbası
This easy Turkish lentil soup (Mercimek Çorbası) is creamy, healthy, and full of flavor. Learn how to make this authentic vegan soup at home.
Ingredients:
Red Lentil soaked 1 cup
Onion diced 1 medium
Carrot diced 1 medium
Potato diced 1 medium
Garlic 3 cloves
Olive oil 1 tbsp
Tomato paste 1 tbsp
Salt 1 tsp or to taste
Black pepper powder 1/2 tsp
Paprika 1/2 tsp
Cumin crushed 1 tsp
Boiling water 1L
Butter 2 tbsp
Olive oil 1 tsp
Red chilli flakes 1/2 tsp
Paprika 1/2 tsp
Parsley for garnish
Dried mint for garnish
Directions:
In a pot add olive oil, onion, garlic, mix well and sauté until translucent.
Add diced carrots and diced potatoes mix well and cook for 2-3 minutes.
Add tomato paste, salt, paprika, cumin crushed, black pepper powder. Mix well for 2-3 minutes.
Add soaked red lentil, mix well and cook for 1 minute.
Add hot water, mix well and bring it to boil. Cover and cook on low flame for 20-25 minutes then blend well with the help of hand blender.
In a pan add olive oil, butter and let it melt.
Add red chilli flakes and paprika powder mix well and cook for 1-2 minutes.
Garnish with parsley and dried mint & serve hot!
