Oven Baked Herb Salmon with Garlic Potatoes & Roasted Asparagus
🛒 Ingredients (Serves 3–4)
For the salmon
4 salmon fillets (5–6 oz each)
2 tbsp olive oil
2 cloves garlic, minced
1 tsp paprika
1 tsp dried Italian herbs (or thyme & oregano)
½ tsp salt
½ tsp black pepper
1 tbsp fresh parsley, chopped
For the garlic potatoes
1½ lb baby potatoes, halved
2 tbsp olive oil
3 cloves garlic, minced
½ tsp salt
½ tsp black pepper
½ tsp dried parsley or rosemary
For the asparagus
1 bunch asparagus, trimmed
1 tbsp olive oil
Salt & pepper to taste
👩🍳 Instructions
Preheat oven to 400°F (205°C). Lightly grease a large baking dish.
Toss potatoes with olive oil, garlic, salt, pepper, and herbs. Spread in the dish and bake 20 minutes.
Remove dish from oven. Push potatoes to one side.
Add salmon fillets and asparagus.
Brush salmon with olive oil, garlic, paprika, herbs, salt, and pepper.
Toss asparagus with olive oil, salt, and pepper.
Return to oven and bake 15–18 minutes, until salmon flakes easily and potatoes are golden.
Garnish with fresh parsley and serve hot.
