Tried some Belons (or European flats grown in US to be more accurate) from Real Oyster Cult. Ate a few raw, was worth the try and got used to them after a few but definitely a much more overpowering oyster than any of the usuals. Cooked with Nori butter and Panko with some olive oil mixed in, used a bit too much Nori in the butter so it kind of overpowered it, not a big deal because I love Nori. Tasted like a good, normal cooked oyster, but had way more meat than any other oysters I have ever had. Lemon and scallions on all of them after cooking, absolutely good choices. Pepper Palace Chocolate Habanero hot sauce on one, Real Oyster Cult love potion mignonette on a second, and sea trout roe on the third. The roe was my favorite, the hot sauce was also really good. This mignonette is my favorite on raw oysters, but didn't stand out on these cooked ones. And then after all that I ate an incredible fish curry prepared by my wife, just so perfectly warm and comforting. I am absolutely stuffed.
