
I was at my rehearsal room last evening to mess around with my new guitar and bought a bottle of ripasso to accompany. I immediately noted that the profile is very tight both on the nose and when drinking. So I poured glasses and let them catch air for 20-30min before drinking and it helped a little bit.
I left a couple of glasses and put the bottle in the fridge with cork on and now tasted again. The wine has really opened up showing it's structure and notes in a way I could not imagine last evening. Is it normal for a ripasso to need this much air to bring its character out?

It’s a tank of a wine – it can handle a lot, and definitely benefits from a lot of air exposure and time.
