    Boiled potatoes – 4 medium
    Green chilies – 2 (finely chopped)
    Ginger – 1 inch (grated)
    Garlic – 5–6 cloves (paste)
    Mustard seeds – Β½ tsp
    Curry leaves – 8–10
    Turmeric powder – Β½ tsp
    Salt – to taste
    Fresh coriander – finely chopped
    Red chili powder – to taste

    🟑 For Besan Batter:

    Gram flour (besan) – 1 cup
    Turmeric powder – ΒΌ tsp
    Salt – to taste
    Baking soda – a pinch
    Carom seeds (ajwain) – a pinch
    Cumin seeds – a pinch
    Water – as required

    Heat oil in a pan, add mustard seeds.
    When they splutter, add curry leaves, ginger, garlic, and green chilies.
    Add turmeric, then mashed potatoes and salt. Mix well.
    Turn off the heat and add fresh coriander and lemon juice.
    Make round balls from the mixture.
    Prepare a thick besan batter.
    Dip the potato balls in batter and deep-fry in hot oil until golden.

    Small boondi (made from besan) – Β½ cup
    Garlic – 8–10 cloves
    Red chili powder – 1 tbsp
    Salt – to taste
    Cumin seeds – a pinch

    🍞 How to Assemble Vada Pav:

    Slice pav buns in the middle.
    Spread dry garlic chutney inside.
    Place a hot vada.
