🌿 Creamy Spinach & Cheese–Stuffed Chicken Breasts
A classic skillet-to-oven stuffed chicken inspired by home cooking and perfected over the years. Creamy, savoury, and simple enough for a weeknight — but special enough for guests.
🛒 Ingredients (Serves 3–4)
For the Chicken
3–4 boneless, skinless chicken breasts
Salt & black pepper, to taste
Garlic powder, to taste
Paprika, to taste
1½ Tbsp olive oil or avocado oil
Toothpicks, for securing
For the Filling
4 oz cream cheese, softened
1–2 Tbsp mayonnaise (to taste)
1–2 cloves garlic, minced
1 cup fresh spinach leaves, finely chopped
½ cup mozzarella cheese, shredded
¼ cup parmesan cheese, finely grated
👩‍🍳 Instructions
Preheat oven to 425°F (220°C).
In a medium bowl, combine cream cheese, mayonnaise, minced garlic, mozzarella, parmesan, and chopped spinach. Mix until well blended and creamy.
Place chicken breasts on a cutting board. Using a sharp knife, slice each breast horizontally about ¾ of the way through, creating a pocket.
Spoon the spinach and cheese mixture evenly into each chicken breast. Secure closed horizontally with toothpicks.
Season the outside of each chicken breast generously with salt, pepper, garlic powder, and paprika.
Heat olive or avocado oil in a large oven-safe skillet over medium heat.
Add chicken breasts and sauté for a few minutes per side, until lightly golden.
Transfer the skillet to the preheated oven and bake for 20-30 minutes, or until a thermometer inserted into the thickest part reads 165°F (74°C).
Remove toothpicks before serving. Spoon pan juices over the chicken for extra flavour.
