I love this dish, it’s so straightforward and easy to make. I don’t use any salt, I just let the fish sauce add the salt as needed. If you haven’t tried it, grab some iceberg lettuce leaves and make little wraps out of them, it’s so good!

I noticed in Thailand, that some cooks will separate the white and yolk, hard fry the egg white, and add the yolk back at the last moment. That makes the egg super crunchy and the yolk nearly completely runny where you can mix it into dish.
