I'm very much a high-brow low-brow combo so this just made sense to me.
Got a deli slicer for Christmas. I sous vide this roast for 24hours at 137F.
Prices of generic, non-premium deli meats are in the $15-$18/lb range where I shop, so I never even consider purchasing. This was cheaper than that but far higher quality/flavor.
This is an outside round roast I got from a wagyu shop I've had good experiences with before on steaks. The meat is a hybrid cross from a black Angus cow and a full blood wagyu bull. Have yet to not love any cut I got from them.
I sliced half and chopped half. Made homemade Arby's sauce for a tasty chopped beef Arby's style sandwich. And banh mi as well.
Would definitely do again for sandwich meats.

You’re a genius and should open a sandwich chain
Beautiful, just gorgeous
Yo… whip me up one of these with the cheddar sauce and onion bun!!! Pretty please 🙏
Looks amazing. Do you season the roast before sous vide or do you just use the flavor of the meat?
now i just need to be gifted a deli slicer :p
This looks amazing. Im curious if your overall cost is about the same or better per oz. Than actual arbys roast beef sandwiches. I bet its cheaper and its obviously much higher quality. You can buy arbys sauce and make arby-q’s lol
Damn it was really hard not to lick the screen seeing pic 3. Marvelous.
Because of my personal experiences, Arby’s has left a bad taste in my mouth … literally. So when someone invokes Arby’s, I instantly shut down. I hate everything they touch. I once got their Reuben sandwich and the meat was the fat cap. I drove back around and asked for the manager. When he came to the window, I slapped the damned fat cap down on the counter and said, “THAT’s why I don’t come to Arby’s any more!!!” I’ve never been back since.
OP’s Wagyu will definitely make a better sandwich than Arby’s could ever muster up.
Arby’s is underselling it.
