    Strawberries & Cream Cookies (Stuffed)

    Strawberry Cookie Dough

    Dry Ingredients

    2½ cups all-purpose flour

    4 TB strawberry powder

    ½ tsp baking soda

    ½ tsp baking powder

    ¾ tsp salt

    Wet Ingredients

    1 cup granulated sugar

    ¾ cup unsalted butter (1½ sticks), room temperature

    1 large egg

    2 TB heavy cream

    1 tsp vanilla extract

    1 tsp strawberry extract

    Dash of red food coloring (optional, for color)

    Cream Cheese Filling

    8 oz cream cheese, softened

    Powdered sugar, to taste (about ¾ cup, adjust as desired)

    1 tsp vanilla extract

    Method

    Filling (Make First)

    Mix cream cheese, powdered sugar, and vanilla until completely smooth.

    Scoop or pipe small portions onto a lined tray.
    Freeze until fully solid.

    Cookie Dough

    1. In a bowl, whisk together flour, strawberry powder, baking soda, baking powder, and salt. Set aside.

    2. Cream butter and granulated sugar until light and fluffy.

    3. Add egg and mix until fully incorporated. Add cream, vanilla extract, strawberry extract, and food coloring if using. Mix well.

    4. Add dry ingredients and mix just until combined. Do not overmix.

    Assembly

    1. Use a 1-ounce scoop for the cookie dough. Then roll

    2. Slightly flatten each portion.

    3. Place a frozen cream cheese filling portion in the center.

    4. Fully seal the dough around the filling. Roll gently into a smooth ball.

    5. Optional: roll in red and white sanding sugar for a finished look.

    Baking

    Oven temperature: 350°F

    Bake time: about 15 minutes

    Bake until edges are set and centers are still soft.

    Cool on the tray for 10 minutes before transferring.
