I made roast beef deli meat using a 24h sous vide cook. The meat is an incredible outside round roast from a wagyu hybrid. Usually this cut would be incredibly lean, took lean for my liking. But the wagyu meant lots of good marbling and juiciness.

Made a homemade version of Arby's sauce to top it.

Safe to say this one tasted better than the 5 for $5 Arby's deals I used to get in high school 😅

    I’m sure that’s friggin delicious, but to me it looks like a fancy sloppy joe. Can you cook the meat less to preserve the slices? I love me a classic giant Arby’s roast beef with like 1 packet of arby sause and 1 packet of horsey sauce.

    If you’re going to make another sandwich out of this, you could make a North Shore roast beef. You can google it but toast the bun with butter, cheese on bottom, a healthy (unhealthy) amount of roast beef, mayo and James River bbq sauce. The best

    Looks delicious, but this is 100% the Joshua Weisman effect. “What if I told you for $100 and 6 hours in the kitchen you could make your own Big Mac.” It’s Wagyu, I would hope it tastes better than Arby’s.
