I love sous vide so much,this turned out splendid for me. Used a kitchen torch to make the outside crust. Yummy 😋

Make it an Auju bath

Searing it in a super hot skillet gives you better flavor and crust than a torch. And if it’s too rare…you can keep searing it a bit longer.
And if you don’t have any au jus…you can heat up some beef broth/stock with the same seasoning that you used on your roast for continuity of flavors…slice and dip until desired doneness.
