CITRUS-GLAZED PORK CHOPS RECIPE
nonstick spray
4 – 6 bone-in pork chops
1 tsp salt
1 tsp freshly ground black pepper
olive oil, enough to coat skillet
3 Tbsp brown sugar
1 1/2 Tbsp molasses
1 1/2 Tbsp maple syrup
4 Tbsp orange juice
1 orange, sliced, for garnish
fresh parsley, leaves chopped, to taste, for garnish
1. Heat oven to 350°F. Spray a roasting pan or a large baking dish with nonstick spray. Season pork chops with salt and pepper. Set aside.
2. Over medium heat, spray a large skillet with nonstick spray and coat it with olive oil. Add pork chops, in batches. Brown chops on both sides and place into prepared roasting pan or baking dish. Safely drain hot oil from the skillet onto a plate lined with paper towels. Turn heat to medium-low and return skillet to burner. Add brown sugar, molasses, syrup and orange juice. Whisk while scraping dripping from the bottom of the skillet. Bring glaze to a simmer. Pour half of the glaze over the tops of pork chops, reserving the other half. Bake pork chops uncovered for 15 minutes.
3. Remove from oven and turn chops over. Pour the remaining glaze evenly over tops of pork chops. Bake another 15 – 20 minutes, or until the pork chops reach an internal temperature of 145°F. Serve warm drizzled with citrus glaze from the pan and garnish with orange slices and chopped parsley.
I prefer to use bone-in pork chops when cooking this dish. The bone helps to ensure tender and juicy pork chops. Also, if you want a stronger orange flavor, substitute thawed orange juice concentrate for orange juice.
