Keto Cauli-rice Truffle Risotto

10oz bag of riced cauliflower

1 pkg Black Truffle Boursin

1 can portabella shrooms

4 tablespoons 4 cheese blend

Instructions:

Steam cauliflower in microwave and transfer to a small pot.

Heat on low and add the rest. Season to taste with salt and cracked pepper and garnish with chives if you are fancy.

Two big portions ≈ 400 calories and 6-8 carbs each.

    Nice idea, I so miss mushrooms sometimes. I think I’d probably add chopped up courgettes instead. What are the different cheeses in the pot because I think we don’t have that here in the UK?
