Will boiling these give me that delicious fish cake broth?
I loooove Odeng how you get it at pocha, in little cups with the delicious hot broth. Anyone know if I can just cook this in hot water for the same effect, or if I need to make an actual soup base to cook it in?
thank you!

No, you’ll need to make an actual Korean anchovy broth. At the most basic level it’s:
They impart no flavor in water, need anchovy soup powder.

I bought an anchovy broth tea bag from a Korean grocery store (H-Mart). It’s pretty good and inexpensive ($10 for a 8 bags), I add fish sauce and dashida powder and the fish cakes.

You need to be out in the cold, bundled up, and sitting in a creaking plastic chair for odeng to taste good.

Just boiling the fish cakes in plain water won’t result in a tasty broth. It’s made from a mild white fish meat bound together with flour and fried in oil. An actual broth needs to be prepared on its own. You can either use whole ingredients mentioned in another comment, or use a powdered or liquid base.
You can often find packs of fish cakes that include a soup base.
There are ready made anchovy broth bags or tablets that honestly work just as well. Add a chunk of radish and half a onion, and green onion near the end. I season it with Tsuyu and that’s pretty much it.

No, the base of that delicious broth is assume you’re referring to consists of: dried anchovies, kombu, radish, onion and tuna fish sauce. I would typically degut the anchovies (about 12) and put them in a pot of 4 cups of water and big piece of kombu, about half a pound of mu or korean radish and half of a large yellow onion skin on and let simmer for about 20min. Strain that into another pot add 3 table spoon of tuna fish sauce 1 table spoon of soup soy sauce and salt and pepper to taste. For then on you can add you desired fish cakes green onions and what not.

I love Joong Boo Market. Used to go to the Chicago location in the old days. Did they finally open the food court in Schaumburg location?

Fellow Chicagolander here. Joong Boo is great. I am always squeamish about buying fish cakes at a store, though. The frozen kind comes with cancer warnings. Why, I wonder. Someone please enlighten me. (Also, if you have a food processor and are so inclined and feeling adventurous, you could totally make them at home.)

For the ultimate street food experience the broth should be made with only soy sauce and MSG.

You should try this if you like Oden. It comes with soup based sauce. I like to add whatever veggies I love, like mushrooms, raddish (it needs cook with the soup for like 20 mins before oden), or sweet corn.

Maangchi, of course, has a great starter recipe for this: [https://www.maangchi.com/recipe/eomukguk](https://www.maangchi.com/recipe/eomukguk)

Search for “fish cake soup” online. You can also use the soup packet from Korean instant ramen.
