  1. I need a chili that doesn't require tomatoes or a tomato base. Wife is allergic to tomatoes any ideas how I can make a chilli she can eat

  2. Last time I entered a chili contest I stumped everyone, they didn't know why the flavor was so rich…and that's because I added dark beer!
    Mine's a spicy chili, so that put some people off up here north of the border, but I wouldn't have it any other way. Gets the heat from chopped jalapeños and a good hit of cayenne pepper to taste.
    Steak and Kidney bean chili is my interpretation. And you gotta use Rotel, that's just a cheat code for flavor.

  3. This will be a bit 'spicy' but it's a true story. I was standing right there when the whole thing went down and I could and would testify in court- and that's coming from a retired Lawyer;)
    There's a place in Southern California just north of Newport Beach, called "South Coast Plaza", or at least it was then, gawd knows what Gavin's calling it now;). It's a huge 'shopping complex', by anyone's std. and they used to hold an annual Chili Cook Off event each year, challenging all of the local restaurants/eateries/bodega's etc. to put up their best to determine who made the best chili in the County.
    Everyone of the big chains, the exclusive clubs, and anyone else who made a chili worth talking about entered the contest. Now to the 'good part'. heheh
    Some miles to the East and a bit north, there was this famous little 'enclave'. And in this little town, there was this COWBOY BAR known to pretty much anyone in Southern Cal who'd ever saddled a horse.
    They decided to enter, and not only that, they were determined to win..
    Now the contest was determined by 3 or it may have been 5 'judges', mostly celeb types. The sample of chili's was listed by number and the names entirely concealed until the completion of Judging. Well one of the most notorious frequenters of this 'Bar' I'm talking about ended up the leader of the team concocting the chili, and happened to be a good friend of mine. He also was dating at that time, one of the most beautiful young (20's) cowgirls in memory. The way it went down was that the actual prep of the chili was done by a collaboration of the very best of the "Bar's' Mexican chefs, they were from Texas, Cabo San Lucas, Acapulco, and someplace North of Mexico City. To put it simply, they created a Masterpiece! However when we got ready to submit the chili for judging, the fearless leader looked up and to his surprise, a rather well known entertainment industry lecher had been chosen as one of the judges. He immediately got his gf up and they went to deliver the big pot of chili to the staff for judging. When they returned, and sat down, he saw my curious glance and shot me a wink. Then leaned back to enjoy the judging.
    So, the judging proceeded for quite a while, with each pot being brought before the panel in turn. One of them would open the lid, another would ladle out three small portions into small bowls for tasting.
    Finally, they got to our pot which was clearly different than the others, a rather old, western styled pot that looked ready to hang over an open fire.
    Our leader was sitting there straight faced as a serious poker player ready to go all in. The first judge lifted the pot's cover, the second reached into it with the ladle, an expansive crowd pleasing smile on his face, looked down , his eyes went wide open and he froze solid LOL. After a moment he scanned the contestants faces as a devious grin started to form. He then leaned forward and Sniffed the chili in the pot. His eyes went to our leader who sat stonefaced as before, BUT, his girlfriend was beginning to blush. When the old man looked at her, she was near crimson. He smiled, and had his fellow judges look into the pot where the same astonishment and 'freeze' instantly appeared. They looked at each other, then the one with the ladle put a portion into their respective bowls. ' As he took his first bite, he made a theatrical face of exultation and said out loud, "This entry is simply incredible, both as to aroma, texture, and taste". One of the other judges nodded in agreement, the other looked embarassed as hell and said nothing.
    Anyway, in the end we, I mean the 'Bar' 🤫 won.
    As he took the award, I looked at my friend and he was grinning like the Cheshire cat. I later asked him what he had done, well, he told me that on the way to the judges with the pot, he had asked his GF to remove her panties and give them to him. She at first refused, but after some pleading she had given in and he had laid them out on top of the chili, closed the lid and turned it in for judging. I laughed so hard and for so long I almost couldn't breathe:). That was many , many years ago, but as I type this, the memory has me busting up all over again.
    Cowboys will be Cowboys heheh.

Cowboy Kent, I just had my 40 year anniversary at the most famous Cincinnati chili company and I'd love to take you and Shannon to one of our restaurants and have a 4-way and cheese coneys – what we're famous for!   7. If you want to elevate your dark beer chili, swap out Guiness for Iron Horse Brewery's "Irish Death" out of Ellensburg, WA. The best dark beer out there, and what we use in our beer chili every time. Thanks for the great video!

  8. 5 years ago I followed your chili for a contest for the Veterans …. I added a few ingredients to make it my own …. Customers would pay $15 for 2 or 3 coins and two little 6 ounces of beer … they would give their coin to the chili chef they thought was best… I didn’t win but I got some coin .. I’m gunna try that Cincinnati chili … not much to add however…… hold yer horses ….. I gotta make all three to prep for the next contest

  9. All recipes that include beer if created by a man must include one beer and a teaspoon. For obvious reasons.

  10. San Antonio , Texas native . In the 1980's I was told by the daughter of a Mexican Restaurant family tomato was Never used in their chili con carne . I quit using it in mine . As an alternative to chili powder I used a a mix of Ancho , Pasilla and/or Chipotle dried peppers boiled in just enough water , allowed to cool , removed the stems and pureed in a blender , seeds and all . Dangerous fumes , be well ventilated !!! A smoke-dried Pasilla de Qaxaca was the best I ever had , but could not find again . I also used twice the chopped onion you suggest , half more sauteed , the rest fresh . Suggestion : use index cards , list the date & ingredients used with every batch , adjust in future batches , refining to your taste . Include a critique once consumed . Chili is not a destination , it s a journey . Enjoy the trip !

    2# pork
    2# course ground beef
    Large can ranch style beans
    1 Big whole diced onion
    2 whole diced garlic
    2 cans diced tomatoes
    2 can Rotel roasted medium
    Chili powder to your liking
    Cumin power to your liking
    Cilantro ground to your liking

  12. Best chili is made with Williams Chili seasoning made in Carthage MO. I’m not a huge fan of all the chiles you put in things. I don’t like my food to bite me.

    And yes beans in chili, but home cooked not canned. Add a homemade cinnamon roll on the side and it’s amazing

  13. I created my recipe in college but I start with a little bacon grease to sauté an onion and a fresh jalapeno, then I use crushed tomatoes instead of sauce or paste

  14. Use your can opener on both ends of the tomato paste, Slide the two ends off and take a butter knife and go around the inner of the can and the paste will just slide right out!

  17. I am just about to make a chilli here in the UK. It's been my favourite for 30 years. My standard recipe includes fresh chillies, cayenne, cumin, paprika, garlic. To make it more aromatic I add cinnamon, nutmeg, mixed spice and cloves. Plus some English mustard. Ok the winter I use cocoa but in the summer I find fresh lemon juice is nice instead.
    Today I'm following the Cincinnati recipe. I like to try original recipes when I can get the ingredients.
