It really was an entirely new pizza for us last night. Starting with the dough, I tried my hand at a biga recipe this time. 14 hour biga followed by 72 hour stint in the fridge. Room temp for ~3 hours before the bake.

Sauce – got my hands on a can of 7/11 tomatoes and really only blended them up a bit more and added a little salt.

I was also able to get a bit of Ezzo pepperoni and Grande cheese!

The dough recipe is a keeper, as is the sauce and pepperoni. The cheese didn't really stand out to me over the whole milk mozzarella I get from trader Joe's so I'm not sure if I'll pursue the Grande cheese in the future.

Oh and the second Pizza was sausage and mushroom, both were amazing.
