    There’s veg, protein and carbs. What’s stupid about that? If available, I’d change a couple of those carrots into another tomato and some garlic but that’s a legit meal as is.

    I would slightly modify it but the main thing you want to change is probably presentation. Either sauce gently over the top or mixed right through.

    I’ll admit my ignorance up front, I’m actually surprised those ingredients can’t be bought for less than $2.50 in Angola. Seems like a lot. I’m guessing the box pasta is most of it.

    I’d cook the vegetables and boil the pasta. Once the pasta is cooked add it to the vegetable pot. Beat the eggs in a cup. Then add it to everything else. Mix for about a minute. Then eat

    I wouldn’t have made it like that, but I would have still ate it if someone made it for me. The eggs though, if you fry them sunny side up, the runny yolk would make this 10x better.

    This actually isn’t a bad list of ingredients. You have carrots, onions, and bell peppers. This is the basis for the holy trinity or mirpoux. With the eggs and tomatoes, you can make a bit of an alleyway tomato carbonara with it.

    Personally, I would have just used the eggs to make egg drop soup, and maybe tried using the onions, carrots, and tomato for a poorman’s Bolognese. Green bell peppers? I guess they can go into the soup? Or maybe eaten raw as an appetizer with some sort of hot sauce concotion mixture.

    I don’t find this stupid at all! if anything I would prep it different. I would have chopped the boiled eggs. and mashed more the tomato to make it more of a paste, and add slowly the other vegetables while taking out the excess of water, seperate one egg white and add it a bit, needs low heat tho if not it will make the white cook and seperate.

    the carrots are a riot because since it’s a root you can mash it. And it taste so good carrot almost in any form wether it’s chips, fries, mash, juice etc. very versatile like potato.

    And the yellow yoke, I would put it into the pasta gradually. Kinda like how they do with carbonara to make it creamy.

    for onion I would have cooked it a bit more until it’s close to grilled with the onion then add the chopped boiled egg and place it on top of the pasta.

    Maybe it doesn’t fit the sub, but it’s humbling and necessary to be reminded how some of us have it easy with food security.
