Tonight’s dinner is a comforting Creamy Chicken & Rice Bake that’s perfect for busy weeknights or a Sunday family dinner. This easy meal is packed with flavor, tender chicken, creamy rice, and simple ingredients you probably already have at home.
I seasoned the chicken with my Cooking With Tammy All-Purpose Chicken Seasoning to add bold flavor. You can also make this dish spicy by using my Spicy All-Purpose Chicken Seasoning if you like a little heat.

Ingredients
Chicken:
* 2½ lbs bone-in or boneless chicken thighs (or drumsticks)
* 2–3 tbsp Cooking With Tammy All-Purpose Chicken Seasoning or preferred
* 1 tsp paprika
* 1 tsp garlic powder
* 1 tbsp oil
Rice Base:
* 2 cups uncooked long-grain white rice
* 3½ cups chicken broth
* 1 (10.5 oz) can cream of chicken soup
* 1 (10.5 oz) can cream of mushroom soup or preferred
* 1 cup heavy cream (or half & half)
* 1 small onion, diced
* 2 cloves garlic, minced
* 1 cup frozen mixed vegetables (optional)
* 1 tsp black pepper
* ½ tsp thyme
* Fresh parsley for garnish

  1. Most people have certain foods they didnt like as a kid, but as they got older they changed their mind on many. Not me, I'm 65 and what I did not like as a kid I still do not eat. This includes mushrooms- I do use cream of shroom in dishes; I just set them aside in my serving. Same for peppers, onions, most beans, scrambled eggs. I'm exceptional at pushing aside what I don't like. At least I am consistent 😊

  4. Cream of Anything soup mix. This is a shelf stable soup base made with clean, easy to find ingredients that are used as a healthy substitute to canned cream of soups in the store. 1/3 cup of this mix is equaled to a can.

    Ingredients

    2 cups powdered dry milk
    3/4 cup corn starch or arrowroot powder
    2 tbsp dried onion flakes
    1 tsp garlic powder
    1 tsp dried parsley
    1 tsp dried thyme
    1/2 tsp dried basil
    1/2 tsp ground pepper

    Directions

    Combine all ingredients in a jar or bowl. Mix thoroughly.
    Store in a quart mason jar or another air tight container until ready to use. It does not have to be refrigerated. Shake before using.

    The best part is that you can make any flavor you want. When you are ready to make your condensed soup mix 1/3 cup of the mix with:

    1 1/4 cups Chicken Broth (for Cream of Chicken Soup)

    1 1/4 cups Water, Broth or Milk + 1/2 cup diced fresh mushrooms (for Cream of Mushroom Soup)

    1 1/4 cups Water, Broth or Milk + 1/2 cup finely diced celery (for Cream of Celery Soup)

    1 1/4 cups Beef Broth (for Cream of Broth Soup)

    1 1/4 cups Vegetable Broth (for Cream of Vegetable Soup)

    *to make a dairy-free version use coconut milk powder. Another great substitute would be cashew milk powder or oat milk powder.
