🥕 Carrot Cake Ingredients:

* Carrots – 10 oz (300 g), about 3–4 medium carrots
* Eggs – 4 medium
* Sugar – 1 cup (200 g)
* All-purpose flour – 2 cups (250 g)
* Baking powder – 2 tsp (10–12 g)
* Baking soda – 1 tsp (4–5 g)
* Vegetable oil – ¾ cup + 1 tbsp (200 ml)
* Vanilla extract – 1 tsp
* Walnuts – 1 cup (100 g)
* Orange zest – from 1 orange (optional)
* Nutmeg – ½ tsp (optional)
* Cinnamon – 1 tsp (optional, but highly recommended!)
* Pineapple, finely chopped – 3 oz (100 g)

Baking Time: ~1 hour at 320°F (160°C)
Cake Pan Size: 8 inches (20 cm)

🧁 Cream Cheese Frosting:

* Butter (softened) – 3.5 oz (100 g)
* Cream cheese (Philadelphia or similar) – 12 oz (340 g)
* Vanilla extract – 1 tsp
* Powdered sugar – 1 cup (120 g)

🍊 Orange Syrup:

* Juice of 1 orange
* Sugar – 2 tbsp (25 g)
* Orange zest – to taste

Caramelized Walnuts (optional)

Ingredients:

* Walnuts – 1 cup (3.5 oz / 100 g)
* Sugar – 3 tbsp (50 g)
* Water – 2 tbsp (25 ml)
* Pinch of salt (optional)
* Butter (for shine, optional) – 5 g

Add sugar and water to a pan and cook over medium heat until the sugar dissolves and turns light amber. Add the walnuts and a pinch of salt, then stir quickly to coat them evenly. Cook for 1–2 minutes until caramelized. Add a small piece of butter for shine, mix, then transfer the walnuts to parchment paper and let cool completely.

  1. Nope. I researched all recipes then inserted what’s needed and changed things. My recipe changes an extraordinary cake to a moist desert that people can’t wait to eat. And less fatty but perfect. If people want cake they always request it.

  2. Any idea how many cups of carrots were used rather than 3-4 medium grated ones? Also, pineapple was 1/8 or 1/4 cup?

  3. Why not use almond oil or coconut oil instead of vegetable oil? Healthier for you, and adds a subtle flavor that blends well with the other flavors in the recipe.

  6. If you grate the carrots with the grater lying on its side, the carrots fall inside and then you deposit them directly into a bowl.

  8. Well spoken video very enjoyable. OK I just learned something new and I found that it gave me a very, very very moist cake. The trick is adding a quarter cup of carrot juice from Trader Joe’s and are use only dole pineapple’s. They have the best flavor and I do put raisins, pineapples and shredded carrots. And a little bit of the pineapple juice as well in the batter this made me the best cake I’ve ever had and this was my first time doing it, adding the carrot juice really made a big difference 🥕 ❤

  10. Great instruction video however Pineapple is not a secret ingredient in a carrot cake this has been around since the 60's.

  11. If you want to make that carrot cake just a little healthier. Don't use oil. Replace that oil with a cup of applesauce.
