👨🍳 Copycat Rayo’s Roasted Garlic Sauce
Makes: about 680 to 700 g (1 jar)
Prep Time: 10 minutes
Roast Time: 40 to 45 minutes
Simmer Time: 25 to 35 minutes
Total Time: about 1 hour 15 minutes
🥣 Ingredients
Aromatics
• Whole garlic bulbs 2
• Yellow onion, finely diced 150 g (about 1 cup)
• Olive oil 60 g (about 1/4 cup), divided
Tomato base
• Crushed tomatoes 800 g (about 28 oz)
• Tomato paste 30 g (about 2 tbsp)
Seasoning
• Kosher salt 6 g (about 1 tsp)
• Sugar 4 g (about 1 tsp)
• Dried oregano 1 g (about 1 tsp)
• Black pepper 0.5 g (about 1/4 tsp)
• Red pepper flakes 0.2 g (tiny pinch), optional
Finish
• Extra virgin olive oil 15 g (about 1 tbsp)
🥄 Instructions
Roast the garlic
Heat oven to 400°F. Slice tops off both garlic bulbs.
Drizzle with 10 g olive oil, wrap tightly in foil, and roast 40 to 45 minutes until soft and golden.
Cool slightly, squeeze out the cloves, and mash into a paste.
Build the base
Heat remaining olive oil in a saucepan over medium low.
Add onion and a pinch of salt. Cook 8 to 10 minutes until very soft and lightly golden. No browning.
Stir in tomato paste and cook 1 minute.
Add tomatoes and garlic
Add crushed tomatoes and roasted garlic paste. Stir until the garlic fully dissolves.
Bring to a gentle simmer.
Season and simmer
Add salt, sugar, oregano, pepper, and optional red pepper flakes.
Simmer uncovered 25 to 35 minutes, stirring occasionally, until glossy and slightly thickened.
Blend for signature smoothness
Use an immersion blender and blend until smooth but still has body.
Finish
Stir in extra virgin olive oil. Taste and adjust salt or sugar if needed.
💡 Pro Tip: The “Rao’s” vibe is gentle. Low heat, no browning, and fully dissolved roasted garlic paste. If you brown the onion or crank the heat, it starts tasting like a different sauce.
