Chef notes

I spoke all about granola with Al Roker when I interviewed him. Granola is usually a deconstructed oatmeal cookie and has lots of sugar and fat. We both always make our own instead of buying store-bought. This one is chock-full of seeds and nuts and will keep you satisfied and energized for any adventure (hence the name). I always take this when my family and I go hiking.

Technique tip: I use an egg white in the granola so that you can use less oil … it helps keep it super crispy and delicious.

Swap option: If you’re allergic to nuts, just use more seeds. Think chia seeds, hemp seeds, you name it.
