Zaalouk Moroccan appetizer made with eggplant, tomatoes, and olive oil, simple, healthy, delicious .
Ingredients
1 big eggplant
3 medium ripe tomatoes, peeled and chopped
3-4 garlic cloves, minced
¼ cup olive oil
1 tsp paprika
1 tsp ground cumin
½ tsp salt
1 tsp Ginger powder
1tsp turmeric
¼ tsp black pepper
2 tbsp chopped parsley or cilantro Steps
1. Prepare the eggplant
Cut into cubes.
roast them in the oven for a smokier flavor.
2. Cook the tomatoes
In a large pan, heat olive oil.
Add garlic, tomatoes,spices, parsley or cilantro, cook for 15 min add 1/4 cup of tomato sauce and cook another 10 min
3. Add the eggplant
Add roasted eggplant to the pan.
Use a wooden spoon to mash the mixture gently.
Cook uncovered for 15 minutes, stirring often, until thick and creamy and all liquid has evaporated.
4. Finish it off
Add chopped parsley or cilantro
Taste and adjust seasoning.
Serve
Drizzle with a bit of olive oil on top.
