I bet the thermometer is busted. Get a secondary one and test it

Those thermometers are usually not very accurate.

Thermometer problem I bet. Take it off and test the tip in boiling water to confirm it’s out of whack. Also, tap the glass, the needle could be stuck. I used to fly really old airplanes and had to tap the gauges constantly.

I had the same problem. I checked the temp with an oven thermometer and was way off. Bought a replacement from Amazon. I think when I burned off the grill it max’s the thermometer and it doesn’t recover, they’re not the most robust thermometers.

you should read [amazingribs.com](http://amazingribs.com) about thermometers. You cannot rely on the bi-metal type, as they are terrible.

I never use the thermometers on grills/smokers.
Try using an ambient temperature probe. You can either get a cheap corded one, or go fancy with a Bluetooth version.
If smoking, you can take it a step further and get an ambient probe that controls the fan to keep your smoker at the perfect temperature.

Has to be the thermometer, OK Joe website has replacements ( or Lowes if you’re in a hurry). That being said , I’ve never cooked anything in my Longhorn gas grill that required more than two burners turned way low, that gets you to 400F easy
