


Iβve been a pastry chef for 15 years, fully vegan for 10 years and this is my go-to vegan chocolate cake + chocolate mousse
After testing countless versions of chocolate cakes, this combination is still one of the most reliable, comforting, and crowd-pleasing desserts I make π
Before getting into the recipe, just to be transparent:
I share my work and full recipes in my app Elineβs Table (plant-based cooking, tested recipes, no fluff). This cake actually comes from my cookbook, and will also be featured there, but Iβm happy to share it here because itβs truly a foundation recipe.
Ingredients
– 140g vegan margarine
– 120g dark chocolate
– 60g cocoa powder
– 130g sugar
– 1 tsp vanilla extract
-380 mL plant milk
– 2 tbsp apple cider vinegar
– 2 tsp baking soda
– 2 tsp baking powder
– 400g all-purpose flour
Method
Preheat the oven to 180Β°C / 350Β°F.
Melt the vegan margarine and dark chocolate together using a double boiler. Remove from heat.
Whisk in the cocoa powder and sugar.
Add vanilla, plant milk, and vinegar. Whisk again.
Add baking soda, baking powder, and flour. Mix just until smooth.
Pour into a greased 18 cm / 7-inch pan and bake for 45 minutes.

Vegan Chocolate Mousse
Ingredients
– 460 ml soy milk
– 300 g dark chocolate
– 100 g refined coconut oil
Method
Heat the soy milk in a small saucepan until hot.
Place the chocolate and coconut oil in a blender.
Pour the hot milk over and blend for 1 minute 30 seconds.
Chill for at least 4 hours.
Whip the chocolate mousse with an electric whisk, adding 65 ml of additional soy milk, to incorporate more air. Slice the cake into three layers, brush each layer with soy milk, then fill and assemble the layers with the chocolate mousse.

How does the frosting hold up? Iβve found with many vegan cake recipes the frosting flattens out and melts quickly and just absorbs into the cake. I think thatβs why so many I buy at bakeries and stores have such dense frosting
