
In my quest of eating the food at home and being "bougie" i finally got my hands on a mini muffin pan and made mini corn muffins out of jif mix ive been wanting to use up. One box of mix, one egg and 1/3 cup milk. 15 min at 400F and i have muffins on hand. Next time, chocolate chip

I made peanut butter at Christmas. I did a double batch of peanut butter cookie batter and after halfway through I wanted to try something different so took out my mini muffin pan, sprayed with oil and just dropped a 1 inch ball into each spot. Soooo yummy!!!
Totally agree with you, I had some mini silicone cupcake molds and mini quiche feel and taste better than a larger one, mini oatmeal pancakes 10 times better than a big sad looking one and plus I get a better fruit to pancake ratio.
How do you store them? Just in the fridge or in a container first?
I’m guessing those would freeze nicely. I do love my mini muffin pan!
I’ve also made mini-quiches with pie crust on the bottom, and mini quiches with slices of ham more or less acting as the pie crust. Quiche, with or without crust, is a great way to use up assorted leftover cheeses, veggies, and/or meat. And it also freezes well.
