Ali Nazik was born in 16th-century Gaziantep, when a local cook named Ali served the Ottoman Sultan fire-roasted aubergine mixed with yoghurt and topped with spiced lamb. The Sultan praised his “delicate hand” — “Ali nazik olmuş” — and a Turkish classic was named. Smoky, creamy, and rich with history.

Smoked aubergine ( jarred or fresh )
Strained yogurt
Salt
