




I'm a beginner getting into the groove, and made a cake to pratice 1) shell piping 2) smooth coating 3) color mixing using freeze dried fruit. It was a delicious and fun experiment!
The cake was Cardamom and Tea's spiced chocolate banana tahini cake (I love everything she does 😍), with a mock swiss meringue buttercream.
The purple colors come from freeze dried blackberries, powdered and shifted into the batter. The three purples are more intense versions of each other, with the flavor ramping up as well.
I added drop flowers at the end for extra practice, but i think might like the cake better before them! (This is pic #2).
10/10 would pipe shells again! Still lots to learn, but they are loads better than my last cake. This is the third cake I've decorated, and I piped about a hundred practice shells on parchment before starting decorate.

Beautiful job, OP, and it looks so yummy!! I’m actually thinking of starting a freeze dried fruits business so the buttercream bit is fascinating! Do you find that it gives you a better result than traditional buttercream?
