    Orange Creamsicle Cookies (Stuffed)

    Orange Cookie Dough:

    Dry Ingredients

    2¾ cups all-purpose flour

    ½ tsp baking soda

    ½ tsp baking powder

    ¾ tsp salt

    Wet Ingredients

    1 cup granulated sugar

    Zest from 2 oranges

    ¾ cup unsalted butter (1½ sticks), room temperature

    1 large egg

    2 TB fresh orange juice

    1 tsp vanilla extract

    Cream Cheese Filling:

    8 oz cream cheese, softened

    Powdered sugar, to taste (approx. ¾ cup, adjust as desired)

    1 tsp vanilla extract

    Method

    Filling (make first)

    1. Mix cream cheese, powdered sugar, and vanilla until completely smooth.

    2. Scoop or pipe small portions and freeze until fully solid.

    Cookie Dough

    1. Combine sugar and orange zest. Rub together with your fingers until fragrant.

    2. Cream butter and orange sugar until light and fluffy.

    3. Add egg, juice,  vanilla and mix well.

    4. Whisk dry ingredients separately, then add to dough just until combined.

    Assembly

    1. Use a 1-ounce scoop (1 oz disher) for the cookie dough.

    2. Slighly flatten dough, place frozen filling in the center, and fully seal.

    3. Roll gently into a ball.

    4. Optional to coat in colored crystal sugar [orange and white]

    Baking

    Oven: 350°F

    Bake time: ~14 minutes

    Edges set, centers soft

    Cool on tray 10 minutes before moving
