I think making it a dip and using chips is better. I make a corn dip with… roasted corn (that has chilled), fresh pico, whipped cream cheese, tajin seasoning, chili powder, paprika, some salt and cayenne pepper, mayonnaise and shredded Mexican blend cheese. I use multigrain or plain tortilla chips to scoop it up with, and it’s delicious! Anyone who has ever tried it loves it!
