What is causing this splotchy royal icing? This is the 2nd time it's happened to me. I thought maybe last time it was because my icing was a tad older, but this was a fresh batch. I have been making this icing for 4 years and haven't changed anything about it. Same with the cookie recipe –nothing is different about it.

The colors are super light, so I don't think over saturation is the issue (a couple drops of the color with some white are in the green). And it's happening ONLY to the green I made from this batch (the yellow and pink seem fine). I've used the same avocado green dye before with no issues.

Any ideas or tips?

    I would bet it’s probably butter bleed.

    Are you using the green as the flood layer for all the cookies? It’s hard to tell unless I look really closely, but it’s more than likely butter bleed. The fat from the butter in the cookie is soaking into the icing, making it look splotchy.

    I found that it’s really helpful to store the cookies laid out on paper towel as soon as they are out of the oven and cooled down. Decorate how you like, and put back on clean paper towels. It’s crazy to see how much grease from the butter ends up on the paper towel.
