This version is Ottoman-inspired, richer and more nourishing, made with lamb bone broth, leeks, potatoes, tender meat, and a smooth yogurt & egg tempering.

Bone broth has always been an essential part of traditional kitchens — deeply comforting, full of collagen, and perfect for slow, healing meals. I’ve been making it often lately, especially during recovery days at home.

Finished with a butter and dried mint sauce, this soup is gentle, bold, and beautifully balanced — the kind of food that warms both body and soul.

Ingredients
About 300 g lamb bones to make the bone broth or you can use already bone broth or skip it.
Two medium potatoes
One onion
Two leeks
About one cup braised beef pulled apart into pieces or use grounded, minced beef that is sautéed or chicken pieces or skip.
Salt and black pepper to taste
For yogurt sauce:
Half cup to one cup thick, preferably full fat yogurt
One egg yolk
2 tablespoons flour
For the butter and mint sauce:
2 tablespoons of butter
1 tablespoon dry mint

  3. Oh yes yayla corbasi the classic yoghurt soup, my parents ate this soup cold in the summer, I tried it. It's really refrehing in really hot days. There is another yoghurt soup I like, i'm sure you know it. It is essentially like a yayla soup, additionally there is chickpeas in it, very small köfte's braised in butter and added in when the soup is already cooked. But the most important for me is the herb, it's called Ash otu and smells heavenly. I saw it only in its persevered form in a glass, in big grain mountain salt. They told me it's cilantro. Fun fact;I hate fresh cilantro but Ash otu is another level.
    I looked it up it's a soup from Erzurum called ayran ashi
