Discover the ultimate Italian comfort food: Pasta e Lenticchie (Pasta with Lentils). This authentic peasant dish from Italy is naturally vegan, incredibly cheap to make, and packed with protein.
The secret to the creamy texture WITHOUT using heavy cream? We blend the cooked vegetables before adding the pasta!
📝 Ingredients:

Broken Spaghetti (an authentic Italian tradition!)
Lentils (dried, soaked for 1 hour)
Cherry tomatoes (Datterini or Ciliegini)
Celery, Onion
Olive Oil, Sale, Chili Pepper (Peperoncino)

👨‍🍳 Instructions:
Soak lentils for 1 hour.
Roughly chop celery, onion, and tomatoes. Add them to a pot with water, oil, salt, chili, and the lentils.
Cook for about 1 hour.
The Secret Step: Remove the vegetables, blend them until smooth, and pour the cream back into the lentils.
Cook for another 30 mins until the liquid reduces.
Cook the broken spaghetti separately (or directly in the pot for a true one-pot experience if you have enough liquid!), mix, and serve with a drizzle of raw olive oil.
