I love to slice up some jalapeños and grill the in a pan with Cajun salt on them. I then dip them in hot sauce.

Instead of slicing them into medallions, why not just slice each pepper longways, in half? Could quarter them, but it would be easier to dip since you can still scoop with them.
“Grilled” pepper + squeeze of lime + salt (and a shot of tequila…?), now that’s a good start to a party

Not exactly the same and a lil messy but deep fried whole jals are amazing. Introduced to them at a Mexican place and it’s addictive. Deep fry til u get a lil color on em and salt heavily after.

If you like that, then slice them long ways into quarters, scoop the seeds out, sea salt then dehydrate for a day. Turns into snack sticks
