For an upcoming weekend, I’m looking to pair some nice wines for three different meals, for three different evenings, picked by my companion. A different bottle for each is possible.

I’m aware we cook relatively non-standard but I’m trying to gain experience and see how wine can fit food. The meals are not necessarily eaten across the evenings in the order listed. Also my companion often makes changes to the recipes, e.g., we might not use an ingredient but we will use the title components.
in Dutch but Google Translate gives a good impression.

The first are Eggs Poached with Paprika Potatoes and likely roasted peppers (as sauce or not). Recipe based on: https://www.spainonafork.com/spanish-poached-eggs-with-paprika-potatoes/

The second is a Shepherd’s Pie with Cauliflower Mash, where we will likely use ground/pulled pork as meat. Recipe: https://ketohh.com/shepherds-pie-with-cauliflower-mash/

The final one is a Mushroom Carrot Spinach Curry (Indian). Recipe: https://eathealthyeathappy.com/meatless-monday-hot-and-hearty-mushroom-curry/

What would you recommend or which advice can you give for good pairings? What tastes to focus on, where to look for inspiration. Many and varied suggestions are welcome!

The wines from my cellar below are all those who I think should be optimally drunk about now. I do have some beyond those so feel free to propose any ideas that pop up.

My own thoughts were as follows:

The Eggs are a spanish dish so I’d be tempted to pick one of my remaining wines from Spain, either the Terra d’Uro Finca La Rana 2012 Toro or Allegro Con Spirito Monte Hiniesta 2011 Toro. Alternatively, one of the Mandourelle’s could work as a semi-GSM blend.

Shepherd’s Pie with pork seems tailor made for a casual bordeaux. The Château Cafol Château Pontet Saint Brice Saint-Émilion Grand Cru 2011, Château La Chapelle des Tours Montagne-Saint-Émilion 2010 or Chateau Tournebrise Lalande-de-Pomerol 2010 might make a decent match.

The curry I find a bit difficult as it has lots of flavors, so might be paired best with fruitier wines with some acidity I think Herdade de São Miguel Colheita Seleccionada Tinto 2015 is described as “It forms a richly textured wine that is ripe with red fruits and acidity, as well as spicy tannins. Light wood aging has smoothed out the corners of the wine” so that could work. Alternatively, Apollonio Elfo Negroamaro 2015 Salenta Italy might work.

What do you think?
