Just visited this newer spot in Pilsen. Hours vary by day and listed on their website. Got there about 945 and they sold out around 10 AM.

They only had four varieties available; a molé, mango pepita w/apricot, plain and blueberry coconut.

Tried everything except molé (sesame allergy); interesting flavor combinations that work. They don’t toast them, but comes with cream cheese. $5 a piece (includes cheese on side).

I ripped and dipped. Nice light Crispy exterior and chewy flavorful in interior. It’s not trying to be in New York bagel and that’s OK. I don’t need a New York bagel; I can enjoy those when I’m in New York.
This is different AND still very good.

Cafe de olla for drink was nicely balanced and not too sweet.

I loved it, staff was friendly and introduced us to the space which is open to hire for events.

First photo is from their website.
