I have a histamine intolerance and can only eat fresh unfermented un-aged cheese and dairy. I've included a list photo of the safe and unsafe dairy products, I can have anything listed with a zero. Given these restrictions; what cheese should I use to make a grilled cheese sandwich?

    I’d use mozzarella. R u able to eat nutritional yeast? That tastes very cheesy but isn’t a cheese product at all. U could maybe sprinkle that on too, for flavor. I’m not familiar w farmer’s cheese but that sounds like it could work too

    Butterkase, mozzarella, and young gouda are the only ones on that list that will give you a nice melty cheese texture. They are all quite mild, so butter the bread well and give it a sprinkle of salt inside and out to accentuate the flavours
