Decided to smoke a prime chuck roast. Three hours in I put it in a tin with veggies and stock, sealed it with tinfoil and cooked it all the way to 203 (more like 208). Rested for an hour. Very good.

    I like to pull mine out a little earlier. 190-195 or there about so I can slice it. Then slice to order so that whatever is left can be reheated to pull apart like yours.
