Hello friends! In this video, I’m sharing the recipe for Tuscan bread soup. Ribollita is a tasty Tuscan soup made with bread, cabbage, and beans. This soup is perfect as a lunch or dinner for the whole family. I usually make it in autumn and winter. It’s a healthy, filling, and completely vegetarian dish! This soup is delicious for both vegans and vegetarians. The vegetables are easy to find and affordable. I use fresh bread, but to save time you can also use pre-toasted bread. 1 onion
2 stalks celery
2 carrots
1 stalk leek
1 bunch black cabbage (Tuscan kale)
½ head cabbage
250 ml tomato purée
2 cups cooked white beans
1 chili pepper
1 sprig rosemary
Salt and pepper
Olive oil
Grated Parmesan (optional)
