Polenta Chips (Serves 4)

Ingredients:

8 cups (2L) Vegan Stock,

3 cups (500g) Polenta / Cornmeal,

Oil Spray (optional),

2 Rosemary Stems,

1 tbsp Salt,

Method:

  1. Boil stock in a medium-large saucepan over high heat.

  2. Whisk constantly while pouring in the polenta, stir mixture until thick. Turn off the heat.

  3. Pour polenta into a container, cool for 30 minutes, cover or sit a lid on the container and then refrigerate until cold.

  4. Slice and cut polenta into chips, spray with oil (optional) and then airfry or oven bake until crisp, around 30 mins at 200C. (Shake or turn chips after 15 minutes).

  5. Meanwhile, remove the rosemary leaves from the stems, finely chop and then mix them through the salt in a ramekin.

  6. Serve the crispy polenta chips while hot, sprinkle over the herb salt and add a dipping sauce if you like, enjoy.
