Last time I posted Pequod’s, it blew up with mostly positive reactions, but it also got a lot of “buuuurrrntt” comments.

So I ordered it again, and flipped a piece for science to show everyone that the crust isn’t actually burnt. It’s intentional. They put a layer of cheese that melts between the crust and pan that caramelizes into pure cheesy goodness. It certainly isn’t for everyone, but don’t knock it til you try it. They’ve been burning pizzas for almost 60 years, so they gotta be doing something right.

    I guess carmalized is a language of some sort for burnt. Never had it, but looks ass.

    Pequod’s is my favorite Chicago style pie, always worth a stop when in town. Their wings are great too.

    I’m a native NYer who prefers a solid char on his crust. Dark bottom and the occasional black bubble on top. I usually ask for a “little well done” pie.

    This is burnt.

    I think there is just some kind of gaslighting that everyone buys into with this Pequods pizza where we all pretend that burnt to fucking Hell and back is actually just “dark caramelization.” 🤷‍♂️ 😂

  13. That is **burnt** not caramelized. It’s literally black dude. Not telling you what to like or not like, if you like it then enjoy it. Just saying that’s not caramelization. It’s a few steps past that.

    Went to Chicago for the first time last fall and Pequods my pick for my first authentic Chicago pizza… and it was phenomenal. One of the best pizzas I’ve ever had and that’s from a NYer.

    And yes, that statement almost got me excommunicated from my family.

    While it does look a bit over on the top and bottom and that caramelized cheese crust on the edges may be black but it’s not burnt. It’s deeply deeply caramelized and it doesn’t taste burnt either.

    Even J. Kenji Lopez-Alt in his Detroit style pizza recipe says that he can’t explain it. Here is a quote where he’s talking about the advantages of using a Lloyd’s pan and getting a crispy cheese crust:

    “Ya see how nice that cheese-and-pan combo works out? For the record, the cheese crust may look black, but I can assure you that it does not taste burnt or bitter. I can’t explain it.”

    It looks burned to the naive. That is one of the best pizzas on earth. I don’t know why I’m saying that. Do not go to Pequod’s, it’s full. No more room.

    I have tried it. I’m Not personally a fan of Pequod’s pizza. Burnt is nasty and that’s usually when I want to take a pass. Some people like burnt. To each their own! By all means enjoy if you’re into that.

    The skeptics need to try Pequods. I was also skeptical and I ate full black bites as a test and it was flavourful and not burned. They have it down to a science, they’re so good.

    We all know just by the colour of that crust that it is going to taste bitter. I love that style of cheesy crust but that has been taken a bit too far

  30. Pequods is good, don’t get me wrong (at least, when it isn’t burnt like in the OP), but there are *far* better choices in the Chi. Lately, I’ve been taking people to Milly’s.
